A stove is the burning heart of any kitchen. It’s where the sweet-smelling aromas come from waking us up in the morning or reminding us of a childhood memory of our favorite dish. It produces the heat the baker relies on for their soufflé, the French chef for their sauce, and the Italian family for their homemade pasta. It’s something the everyday homeowner relies on to make meals for them and their family day in and day out. So we will look at, from simple family meals to the best restaurant in town, what should be considered when deciding on the stove you want to purchase?
Natural Gas Range vs. Electric Range
Here at The Gas Connection, we see all the benefits of natural gas and the smiles on our customer’s faces after an install. If you have the means or simply a gas contractor you trust we would recommend the gas over electric because it cooks better at a better price. We also recognize as the reader you might suspect some bias from a company that makes a living from installing gas lines. So, before we offer our expertise and advice let’s go right to the horse’s mouth and consult the ones who make their living in the kitchen.
Asking the Chefs:

Who better to advise on a preferred cooking appliance then the ones who rely on them day in and day out? Like any professional, it is instrumental to have the best tools to succeed in one’s job. It’s beneficial for restaurants to have a stove that churns out the best product for every customer.
I’ve been in this business for over 25 years and I don’t know of any professional chefs that prefer using electric. We have taught more than 5,000 students to use gas ranges because they are easier to control, quicker to heat up, simpler to clean, and less expensive to maintain. When deciding between gas and electric cooking appliances, there really is no question. Gas is always the better alternative.” ~ Jeff LaBarge, Culinary Arts Program Director at Central Piedmont Community College
This is not an uncommon statement, in fact, according to a survey conducted by Fryett Consulting Group, 98% of the chefs selected prefer gas as their ‘primary energy source for their primary cooking equipment.
A few benefits you can expect from your Gas Range:
- Consistent and even controlling of heat
- Faster heating and cook times
- Lower operating cost
- Better cooking results
Here are a few more statements from chefs on their choice.
I prefer gas because of the visual heat monitoring, quick response and overall higher BTU’s generated than typical electric equipment. And I really like using today’s modern and highly versatile gas combi-oven,” ~ Jeff Bacon CEC, CCA, AAC Director/Executive Chef Triad Community Kitchen and Second Harvest Food Bank of NWNC:
As a professional chef and culinary instructor, I prefer the more precise controllable attributes of gas. Gas heats pots and pans quickly, and during the cooking process, the flame can be controlled up or down depending on how much heat you need. And, if you’re looking for a grilled and smoky flavor (wok hay) in a dish when stir frying, the intense gas heat is nearly impossible to achieve with electric or induction. A simple sauté pan, and a gas burner — you can do so many things — it is up to your imagination.” ~ Joe Bonaparte, CEC, CC, MHM Director of Curriculum & Quality Assurance The International Culinary Schools at the Art Institute
When training newcomers to our industry, it’s important that a consistent product is achieved. My experience is that gas offers more of an ability to quickly control cooking temps. My appliance favorite is a big tilt skillet. Stews to mass quantities of fried eggs can be done on this versatile workhorse.” ~ Ron Ahlert, Executive Director Community Culinary School of Charlotte:
I know not everyone is a chef or an aspiring one, but you must admit their arguments are convincing. If you are convinced or not what are the next steps if one decides to purchase a gas stove?

I am a chef how about me? | An Additional Note to the Chefs:
Ok ok we did not expect to see you here. If those shining testimonials from your colleagues didn’t convince you. Here is an interesting article on the savings between electrical and gas appliances in the kitchen. Many people worry if a repair needs to be made on their gas stove that the price of the service and parts would be so high, they could not justify purchasing gas over electric even with all the other added benefits. This can be a serious concern in your commercial space when your equipment is your livelihood and used day in and day out.
An in-depth comparison article written by Brad Pierce president of Restaurant equipment world comes to the conclusion that with modern-day equipment “Gas kitchen equipment will cost less or the same amount of money to repair and/or maintain than its electric kitchen equipment counterpart.”

Best Gas Ranges according to Consumers Report | Final Note to the buyer
F&Q:
How much does a gas range cost?
Like any kitchen appliance price can vary greatly. To get an accurate price of a great quality gas stove I averaged the costs of the models tested by consumers report and the pricing is as follows:
Gas and Dual-Fuel, Single Oven (30 inch): Avg Price: $1356.20
Highest price: Café CGS700M2NS5: $3299
Lowest price: Whirlpool WFG515S0ES: $380
How does a gas range work?
The basic directions for a homeowner to light a cooktop is as follows. Push the knob in and turn to “Lite” to engage the electronic ignition. Once a flame presents turn the knob away from the “Lite” position to desired heat. In case of a power outage, you can also use a long gas grill lighter in place of the unpowered electronic ignition. Follow the same steps turning the knob to “Lite” firing up with the lighter and turning to desired heat. You can always refer to your range’s user manual for specifics. It’s important to keep in mind if your flame goes out, gas is still flowing to the burner, shut off and ventilate the surrounding area as needed if this ever occurs.
Which Gas Stove is Best?
Consumer reports findings on testing 66 Gas and Dual-Fuel, Single oven found this:
All top ten ratings are either Samsung or LG with the top 3 spots all being Samsung.
The highest rated is the Samsung NX58H9500WS
Out of the top 20 highest ratings: 8 are LG, 8 are Samsung and the remaining 4 are GE.
Along with the findings from consumer report and our experience in the field seeing the functionality and durability of each brand and model we would also recommend a Samsung or LG for most homeowners.
Where to locate gas line for range?
Your gas line should be run tight and neatly to the back of your range per the specs on the Installation manual and following local gas codes. For example, on the Samsung NX58H9500 the installation manual shows the “Gas floor area” as 17” X 2” located in the rear left corner of the cabinet opening. The manufacturer notch will house the gas pipe stub allowing for a proper connection and flush install.
